Basically, i'm not too sure if this is just a Minecraft bug or server bug, but what happens, is that when you try to eat food/drink a potion whilst facing a mob, it creates the animation, but doesn't apply the food/potion unless you look away and eat/drink again. The mob can be in your FOV (Field of View) but the crosshair can't be on the mob whilst drinking a pot/eating food.
